Machine Finished Bevels: Patek vs Others

One of the most obvious ways to distinguish a hand finished bevel from a machine finished one is its profile: if rounded, the anglage is most likely hand done.

But with Patek it's different, their anglage is rounded off but still machine finished, so it makes me wonder why can't brands like AP and JLC introduce the same level of anglage on their entry level pieces. Is it that difficult?

EDIT: This post is not entirely accurate and implies something unclear. Please read my post below, which casts Patek Philippe in a more fair light.

The machine they're made on was hand made over 200 years ago.

I suspect it’s the other way around. The chamfers are machine cut and then hand-finished, but sometimes the machining marks still come through.

I get the machining marks removal but they don't really do that great of a job since they often leave some visible. That's what made me think that the anglage is only machined.
