Again each watch is different but every NEW Speedmaster I have purchased has been about the same.
The subtle differences I have felt personally have been the resistance of the crown when winding.
For example, my Speedy Tuesday 1st edition, Speedy Tuesday Ultraman, and Apollo 11 50th in SS have about the same resistance. The Moonshine 50th has slightly less resistance and seems slightly smoother. This could be gold vs SS, no idea here. My Apollo 8 DSOTM is the smoothest winding Speedmaster I have ever felt as a new purchase, probably due to the slightly modified movement with the extra jewel.
Come to think about it, my Silver Snoopy, Soyuz, and few others had about the same resistance as these newer Speedmasters as well although I did find then Silver Snoopy slightly smoother.
Abel is correct that it comes down to each individual watch and over time it becomes easier to wind.
