Yes true, I see what you mean...
... but in the current watch world and environment I guess the risk is quite manageable if one goes independant. Of course you need skill, but in his case... he is working since so many years and should have some confidence in his skills and creativity. He's not like 20 or so (even that COULD work).
We guys here often studied for soooo many years, but he worked already so long in the industry and could master his craft. More important if you are in your 30s, knowing what you CANNOT master (you mentioned the things he sources out, for example if he knows a friend who is a master in engraving and his own talent is somewhere else). It is smart both in a personal / character way but also in a business way here.
That all sounds very good I think.

I hate to invite comparisons... But there's really nobody else quite like him on the market right now. Just extraordinary. True traditional style, independent style, made without CNC machine watchmaking at its finest.
