If you're a collector, there is no optimal number of watches - the size of your collection should always be changing.
If you're the sort of person who wants to wear all your watches, there's a reason to choose quality over quantity. I'd say two watches is too few though.
Let's say you go to the extreme and consolidate your collection to two amazing watches: a JLC Gyrotourbillon for dress and an Urwerk 202 for casual wear. If you dress casually for work, you'll wear the Urwerk 90% of the time. If you wore the Urwerk 202 everyday M-Sa non-stop for years, it will eventually become just another watch. Plus you'll need to send it in for servicing and it will be gone for two months every five years (~ 1% of the time).
To keep the Urwerk feeling fresh, you need a third watch that you're excited to rotate it with. Not necessarily 50/50, but three weeks on, one week off.
Finally, you need a beater watch, something you'd feel comfortable wearing anywhere in the world.
So I arrive at four, but everyone will arrive at a different number.
