The pusher does a few things
The pusher is used for setting the perpetual calendar, but can also be used to show how much charge the watch has, and do a 'factory reset' (to be done in the event that it is not keeping good time). There may be other functions hidden in the manual as well, as I haven't read it that closely 
Independent hour hand adjustment is done with the crown in the first position.
