I think the dynamic you're describing applies to collecting any functional objects, not just watches...

You have the super high-end, bespoke, custom products, and then then you have the next-level, top-of-the-line, well-regarded, well-known, mass-produced products. It applies to pens, fishing rods, shoes, clothes, etc.
Regarding watches, I think many folks here who own higher-end, more costly pieces also have an Omega and/or Rolex that gets some wrist time too. That's because they appreciate and respect that each occupies its own different (vs. superior/inferior) place in the horological universe. Dufour can't make a Submariner, and Rolex can't make a Simplicity.
