David, thank you for taking the time to put together this post, and to supplement it with very well taken (magazine quality) photographs.  You can see that care was put into the individual photos, each framed so that the watch fills the same space in each.  It really enhances the content/text.

It is already a superb collection, but I understand as well as any of us here that collecting never sleeps and thoughts most often drift towards what is next. 

So in terms of a next move the best we all can hopefully do is to point you in various directions in an attempt to ensure you've considered a broad enough range of possibilities.  

Your themes this far are all functional, even if the chronographs as you say serve little purpose in today's world.  Perhaps a fourth theme could be less function and more art.  

There are some different ways to take this.  

The rare handcrafts of Patek is one such route.  Or if not going that far, as these are clearly not everyone's taste, you could maintain your desire for functionality and have something more artistic with a Patek WT 5231.  Vacheron is another option here too.  And Kari, depending on what you might commission, may also fill this artistic gap.

Alternatively, looking at the art theme from a more mechanical perspective there is MB&F (as others have mentioned and you have also referenced in the comments), or perhaps to a lesser extent Urwerk.  

That's my one thought, it'll be interesting to see what your next step will be.

I do agree that I’m missing a JLC. I looked at the UTT, and while I love the concept, it doesn’t move my needle for some reason I find it a bit cold. The IWC is a lovely watch and really easy to read.

A simple dress watch is certainly a great choice! I think VC cannot be beat in this category (two hands Patrimony with grey dial in platinum, that would be my choice...). The box is made by a company called Wolf 1834, great products. Cheers!
