Hello from your Seiko moderator. As you know, GS is part of the very large Seiko universe of watches, clocks, sport timers, etc.
Grand Seiko defines its mission in these words:
Grand Seiko believes that the essential qualities of a wristwatch are accuracy, beauty, legibility, durability, and ease of use.
This self-defined mission excludes complications. GS will produce 3-hand, GMT and a few chronographs - nothing else. You must go to another Seiko brand for complications, satellite watches, radio-atomic clock timepieces, etc.
Regarding the date setting — I have owned several dozen GS models and now own 12 GS and Credor models. All modern GS have quick-set dates (except GMT models). Only those from the 1960-80 period have the old date setting mechanism, in my experience.
In a series of about a dozen posts a few years ago I described my visits to Seiko and Grand Seiko facilities in Japan, and subsequent discussions with Seiko personnel. I believe it is futile to expect them to operate like any Swiss or other Western watch company.
There are who they are, and their mission seems to be constant incremental change at their own pace.
