Patek 5227 vs. Rolex Day-Date 40

Assuming you mean the Day-Date 40, I think you'd find that it looks slimmer and more elegant than your Sub, while the 5227 might look surprisingly large because of the thinner bezel and the lug structure.
You use the phrase "dress watch," to which people attribute diverse meanings. I have a Day-Date 40 in platinum that I've worn with a business suit or sport jacket, but I don't consider it a true dress watch, primarily because of the bracelet. The President bracelet is very comfortable and catches the light nicely, but it calls attention to itself, which is one of the reasons I don't consider it a dress watch. A fluted bazel would magnify this issue.

Patek: more subtle and more delicate (less WR, leather strap) Rolex: iconic duo with your Sub, robust You can't go wrong with either but I particularly like the black dial Patek 5227...
