The other 98% of consumers expect a date and couldn’t give a frig how far in or out the display window is.
Again, until brands perceive this problem themselves or are made aware of it through lack of sales, etc, then dateless watches with properly sized movements for their case dimensions will be very much in the minority.
As for the 10800 being used in the 40mm case – whilst it may possibly fit (or made to) given the difference in diameter (30 vs 25.6 mm), their stubbornness to include a date display would mean the window would be too close to the edge of the dial, thereby being unable to fit the baton at 3, and throwing off the symmetry/aesthetic balance.
Your pondering is akin to asking why the same brands don’t colour match their date wheels or always use the default white ones, even on darker dials. It’s a lazy and the cheapest option, providing minimum effort and maximum profit.

Why does GP insist on using such a small movement? Haven’t they learned by now? Is that their “thing”? And if it does, why put a date that accentuates it? ...  

It’s endemic rather than "their thing".

Most of the manufacturers use existing calibers rather than spend the CHF 1M (for a 3-hander) it costs to design and produce a new movement. Patek does it with the 324/330 between 37mm Calatravas and 42mm 5168 Aquanaut. Beside Lange & Sohne and independen...

Without the date the small movement would not be a real issue.

There are a lot of watch enthusiasts out there who are not as "enthusiastic" as us. I have a friend who has a nice Breguet La Tradition and a JLC Perp who bought an IWC Le Petit Prince and not once did even notice how far off the date was from the 3'0 clo... 

But that bridge is a nice touch..
