Using up the produce from George's Farm

We have had 4 meals featuring our haul of veg this week.


First dinner using chicken dark meat, off the bones, in a baking pan. Bottom of the pan lined with thin slices of lemon, then chunks of the chicken meat, a few beans and a dozen quartered apricots. Topped with more lemon slices and baked for an hour or so in the oven. It was fantastic.






Next meal we had pork spare ribs (too hot to BBQ) roasted in foil package with several apples.



The meat completely fell apart and off the bones as I transferred it to a serving dish. Maybe a little Calvados would work with this?



Roasted the beets at the same time as the pork and cut some cucumbers and pickled them.



Forgot to cook the potatoes.



We just "porked out" on the rib meat and apples.
