I don’t really post food pictures here, but I do take a lot of pictures of food. Too many. Don’t ask why, it’s just the way it is.
This is less of a food post and more of a travel post. For a long time I’ve been fortunate to travel to Japan a couple of times a year. My last trip was almost one year ago, and I’ve cancelled two trips since then. I don’t see myself being there until next summer at the earliest and hence I’ve been looking at old photos and just daydreaming of being there again.
A regular ritual on these trips is Sushi. It’s almost religious. I have very limited Japanese and most chefs have limited English and so one tends to just sit back and watch, the knife, the hands, the ingredients. It’s really theater, and it’s amplified as these are always small places, a counter with 6 - 12 seats. All the eyes are on the man (it’s always a man) behind the counter. It can be a very peaceful 60 or 90 minutes.
