Roasrs with bacon wrapping make me always " sad because there is no halal bacon produce.
It is a great looking roast, that will be also very intense tasting.
The molasses will make it all sticky and tangy.
What about some dried plums too, ontop of the bacon, or under?

We have plenty, but might be too tart with the pomegranate ...
