Fitting from a guy whose family came out west from Iowa... roast pork tenderloin, with pomegranate molasses, wrapped in bacon.


Had dinner with another couple last week who are foodies, and they gave it high marks. 

We started with a little salad.




Side dishes were potatoes/broccolio au gratin and roasted rainbow carrots and beets. 
All three dishes go in the same oven at 350F/170C with convection fan ... however the veggies take 40 minutes vs around 20 for the meat, so start them earlier.






Visual check (almost ready to pull the meat) it needs a bit more time to crisp the bacon.



Out of the wrapper but forgot to take pics of it sliced



So today I got some more pork and some high-quality thickly-sliced bacon and we are trying it again with visitors from out-of-town.







If we survive I will report afterwards.

Roasrs with bacon wrapping make me always " sad because there is no halal bacon produce.

It is a great looking roast, that will be also very intense tasting. The molasses will make it all sticky and tangy. What about some dried plums too, ontop of the bacon, or under?
