My wife got me started making Pizza

I found a recipe that was easy enough for the dough. This will make a 12 inch pizza. Add more flour/water for larger.
4 oz flour (all purpose or pizza flour)
3 oz water
1/2 tsp yeast
1/2 tsp sugar
1/2 tsp salt
Mix and set in a small bowl with a couple splashes of olive oil
Give it a couple hours, then flatten onto a pan. Slowly stretch it out, in 3-4 stages, giving it 10 minutes rest between stages
You can make a tomato sauce but I had dozens of cherry tomatoes and fresh rosemary. The recipe says 24 will suit a 12" pizza.
The tomatoes go in a low oven for an hour or two to soften and roast, til they look like this.
I had a chunk of ham so threw a few pieces on there too, about a half hour before they were done..
Bake the crust in 475Β°F oven for
5 minutes. or till you see some slight browning.
Pull the crust out, paint on the sauce or put on the tomatoes, toss on your cheese, and any other items, then return to oven for 5-7 minutes.
Pizza One had tomatoes, ham, golden beets and 4-cheese shredded mix
Pizza Two got olives, tomato sauce, mushrooms and real mozzarella
Pizza Two approaching the plate
Pizza Three is large in diameter, used more tomatoes this time but simmered in a skillet with olive oil, black olives, mushrooms, golden sweet peppers, some basil leaves, and a few anchovies - an acquired taste (Yum)
Try it! Really easy and you don't have to throw the dough up on your kitchen ceiling.
