My wife said “Please can you make something easy, cool, and goes with toast?”
Ok, looking around I found an apple, carrot, rainbow beet, and a radish. I grated them.
A bed of green lettuce and colorful bowls look like fun.
And we have some bay shrimp thawed too.
Dressing is made from olive oil, honey, salt, lemon juice and some pomegranate juice.
A few seeds for garnish. All tossed in the big bowl and placed on the lettuce!
Catsup, lemon juice, horseradish and we have a cocktail sauce for the 2nd salad.

Bread (still slightly warm when cut) turned into slightly charred toast, then buttered.
