Fitting from a guy whose family came out west from Iowa... roast pork tenderloin, with pomegranate molasses, wrapped in bacon. Had dinner with another couple last week who are foodies, and they gave it high marks. We started with a little salad. Side dish...
Roasrs with bacon wrapping make me always " sad because there is no halal bacon produce.
It is a great looking roast, that will be also very intense tasting. The molasses will make it all sticky and tangy. What about some dried plums too, ontop of the bacon, or under?
My wife suggested persimmons
We have plenty, but might be too tart with the pomegranate ...
This looks more than just satisfactory 😋😋😋
