Smoked Turkey

Bought from farmer down the road.
Wet Brined, infused with butter/rosemary/maple syrup and lemon

I removed the spine and cooked it butterflied to internal 165F
Took about 3 1/2 hours. Turned out well.

We always had duck or store-bought, because we couldn't catch one of these running around by our cabin... Of course there are many reasons WHY we couldn't get a wild turkey... ...
