I discovered this tradition to select the butcher's knife very recently and I have to say was a bit dumbfounded. Does anyone have an explanation?

Guy Crimms, one of the owners, was a partner in our local butcher shop for many years until he left about a year ago to join the others to start Niku. That butcher started an emphasis on Wagyu about 4 years ago and Guy and the others started going to Japa...
I ate at the restaurant next door.
There was no sign saying the restaurant name so I went into the Butcher shop and took photos of the meats. The 2 big bronze doors are nice though. I donāt think they will serve cook food in the shop.
