Did you eat at the counter of the butcher shop or at the Steakhouse itself

Guy Crimms, one of the owners, was a partner in our local butcher shop for many years until he left about a year ago to join the others to start Niku. That butcher started an emphasis on Wagyu about 4 years ago and Guy and the others started going to Japan. As I commute to Japan as well, I have been able to learn a bit from him about how that end of the business runs. Regular trips to Niku are not in my price range.

Best beef forever? Last week I went to SF and had chance to visit NIku Steakhouse. This place is a meat heaven and so many varieties of cuts and A5 Japanese Wagyu. Tried their A5 Takamori Drunken Wagyu, which they said is exclusive, only 3 cattles send to...

I discovered this tradition to select the butcher's knife very recently and I have to say was a bit dumbfounded. Does anyone have an explanation?

There was no sign saying the restaurant name so I went into the Butcher shop and took photos of the meats. The 2 big bronze doors are nice though. I don’t think they will serve cook food in the shop.
