"remontoir" simply means winder, i.e. the winding crown of a watch. What we often call a remontoir is just the shortened version of "remontoir d'égalité", which indeed regulates the flow of energy from the mainpring to the escapement.

A friend of mine once experienced a similar problem. The crown did not actually come off but it no longer wound. I understand that F.P. Journe has long since corrected this by replacing a part or two with a different alloy. Needless to say, it should only be done at the factory.
