Does it get any fresher than this?
We were out in the Lotus taking a drive by the bay, noticing how intense the blue sky and water seemed...

when we came across the Bluest Corvette I have ever seen. The owner came up to us as I was taking a picture and we had a short chat about the pleasures of the C8 Corvette convertibles. The calipers and steering wheel on his car are in the blue of his high school colors... and the rims are awesome!
I made a chicken dish last night (thighs coated in fennel, cumin, tumeric and olive oil, and roasted with olives, carrots and fennel tops, on a bed of rice), so I thought why not have fish tonight, if we can find some?
So we stopped by the dock, the boat was there, the booth was open, and I asked for some Albacore.
The guy at the register said "We're out ... but if you've got a minute, there's plenty on the boat."We walked a whole 20 or 30 feet to the boat and ... they pulled up some fish.
Mine is the "little one" at the bottom of this picture. The big colorful fish are called Opah; very popular around here and Hawaii.

The cutting began immediately.

Soon we were on our way with 3 lbs of albacore, and I was ready to do some cutting of my own.
Here are seven 5-oz pieces, plus trimmings. And one other big piece went in the refrigerator to be saved for a few days.

We decided to make some ceviche (raw fish salad) with fresh lemon, dill tops, chopped radishes (I'm unable to eat onions or scallions), Ponzu sauce, sesame, etc. (including some IWC Climate Action).

The fish is "cooked" by the action of the citrus and changes color and texture.

One hour after watching the fish coming up from the hold, we are finishing our appetizers!
