We started by making the crust, then cutting the veggies. It became entertainment, as we created a Christmas tree on the cutting board.
Two dozen cherry tomatoes had been roasted earlier in the oven, with fresh basil & oregano. 🌿
I dried out some peppers and mushrooms and olives in a skillet. This means they won’t give up their moisture into the pizza crust, making it mushy.
We grated some cheese (no mozzarella on hand)
The dough was spread over an oiled pan and covered with plastic wrap and left to rise for about 30 minutes.
Then it went into a hot oven 475° F for 5-6 minutes.
We pulled it out, sprinkled on the toppings and put it back for another 7-8 minute bake.
Out of pan and cut into 8 slices!
A simple Salad was assembled during the baking intervals.
Served with a French rosé, the Pizza quickly disappeared.
The salad was tasty too, with fresh lettuce & herbs and tangy oil and rose vinegar.
