I would go for the blue. The dial seems more 'alive' than the burgundy which is more of a matt finish although your wonderfully taken photos indicate otherwise.

It is more original as a dial colour than blue... and it reminds me of a nice French region too

Tough choice. I like the burgundy for variety and with contrasting straps imagine it could really pop. But the blue is so well done, however there are so many blue pieces in this universe to choose from... so conclusion for me if I had to choose a reverse it would be the green dial... but since you are not offering this alternative I vote burgundy!
