Next was the Yusheng, an auspicious appetizer and a Chinese
New Year dish to symbolize "good luck" for the new year.
The
ingredients are made up of thin slices of raw fish and various spices.
One of the servers assisted to prepare the Yusheng ...
And now for the tossing action known as 'lo hei' ,
which means to "rise" (hei) symbolizing a thriving business for the
year.
