As next year is a key anniversary year for the Offshore, your post will definitely spark the imagination for potential future releases and reissues?!?
I must say - my first AP was a Beast, and at that time I had a choice of getting a Daytona or a Beast over 20 years ago, and I took the rather uncommon choice of getting the Beast, to differentiate from the LA collector scene. It catalyzed the journey that I continue today with AP.
Other watches of note are any of the Alinghi models, the Survivor, the EOD, the GP, and the Schumi. As well as the original Rubberclad.
Today, it's extremely hard to choose, but I had always coveted the RB2 Rose Gold from the day it was released. Ceramic pushers, bezels, skeleton dial, with bespoke details throughout. 
My hope is that they will bring back a few models next year!!! And please please consider to make bespoke boxes too! (My favorites - the Survivor box and the Alinghi box!).

The strap which initially came with the Safari. Perfect match with the grey dial ( I hate the standard bi color light grey coming with the watch, it feels super cheap)

The Schumi is very unique

My only Offshore . . .

It’s always good to see an AP worn like it should be. I think M4 has one of my top 5 fav offshores. Something about it whispers “robots in disguise” (slogan from Transformers)
