I'd seriously consider the Striking Time. I have tried the ZW Date and I really liked it. It's beautiful -- really well-executed. I don't own one of these, though.
I do own a Striking Time, which is huge on my 6"/154mm wrist. However, that's okay. I still enjoy wearing it even though it looks big.
Below are wrist pics of both. As you can see, the ZW Date is also huge. I didn't notice much of a difference between that and the Striking Time on my wrist, perhaps because both are so big in the first place.
You said you're looking for something a bit different, with a twist. Given your ambivalence about the date function, I think a chiming complication is a much nicer and more special twist than the ubiquitous date complication.
The Striking Time's relatively short power reserve is a feature for me, not a bug, because it means I have to wind the watch daily. Winding the ZW sloooowly -- savoring it -- is a true joy. The winding mechanism is like a stiff, precise ratchet. It's a very distinctive, unusual experience, unlike winding (all?) other Lange models.
Good luck in your decision. As long as you get some kind of Zeitwerk, you can't go wrong!
