Whole Deep-Fried 'Soon Hock' Fish in Coriander and Soy Jus

Marbled Goby or "Soon Hock" (Oxyeleotris marmorata)
This large, grouper-like fish is reputedly the largest goby in the world. It is sluggish and prefers to spend most of, its time half-buried at the bottom, with eyes sticking out, to ambush prey. It is a much sought-after table fish, commonly found in the menu of many Chinese restaurants. 

I usually never comment about food that I eat as a guest but this was one of the best and crispiest renditions that we have ever had (Mrs MTF and me). Even Jokoh liked it and he already ate before attending this event!
