As long as the watch has intrinsic value, there will always be companies to supply parts and watchmakers to repair the piece.

This is just like vintage cars... I wouldn't worry too much about serviceability of the LF. These are mechanical watches after all. They can be fixed.
If its long term prospect is what keeps you sitting on the fence, think about just how many brands that will guarantee to still be around in 30 years, let alone 100. Under five? If you agree with my assessment, doesn't that sound a little boring?
As for your other point, the watch industry can probably do itself a lot of good also by devoting more resources into transferring their skills to the next generation of watchmakers. Reading about projects like the Time Aeon foundation that's supported by Urwerk and Greubel Forsey is quite encouraging.
