Living in Chengdu is a culinary experience if you enjoy spicy food. Among all the incredible gastronomic offer I particularly love their cold dishes, usually made with meat and exotic vegetables, all macerated in oil and thousand spices, and served with local baijiu.
Here with my beloved and versatile SMP and a bottle of Maotai to warm the throat.

There is not much meat in it.

Folks usually suck the braised parts. In Singapore there's another dish with similar idea, where you suck the bone marrow. Cheers PAt
